What demo mode does

• Blocks changes to settings, templates, extensions, the license and the demo accounts.
• Hides credentials on the server: API keys, SMTP passwords, license codes and file paths never reach the page.
• Masks emails and phone numbers in lists.
• Sends email and SMS to the log only.
• Resets the demo data on a schedule.
